I picked up these adorable miniature pumpernickel slices the other day and have been topping them with all kinds of stuff. This is my favorite combination so far.
Butter + cucumber + radish + coarse sea salt.

I wanted something, but I didn’t want much. And I wanted it simple and satisfying. Cucumbers are probably the most refreshing vegetable on the planet. And it’s amazing how just a little bit of salt can really set them off. The peppery bite of a radish is the perfect complement to that. And warm butter…well, warm butter is just something too special to do without.

Lightly toasted the baby pumpernickels. Spread a nice layer of butter across them. Topped with a single piece of cucumber + two paper-thin slices of radish. And cracked some coarse sea salt overtop.

Coop/prep time: 10 mins. If you can’t find the mini pumpernickel bread, this will be just as good on larger slices…or you can just cut your large slices into quarters.

You need:

  • Sliced pumpernickel bread
  • Butter
  • Thinly sliced cucumber
  • Thinly sliced radish
  • Coarse sea salt


  1. Toast pumpernickel bread
  2. Spread a nice layer of butter on toasted bread while warm.
  3. Top with cucumber and radishes (1 to 2 ratio). Drop a little coarse sea salt overtop.

    I make something simular and put a thin layer of cream cheese on the baby pumpernickel, then top with a couple thin slices of cucumber and sprinkle with dill weed. Such a light and tasty snack.
    I will be trying your version too.

    there aren’t many better combinations then cucumber and a coarse salt, and on pumpernickel no less!
