This is one of my favorite things to eat for lunch these days – pumpernickel bread topped with avocado, sliced apples, radishes, cucumbers, goat cheese, salt and pepper and a nice drizzle of olive oil. The higher it’s piled, the better.
I cant get enough of the apple/avocado combo lately so it’s what I decided to share when recently asked by Joy over at OhJoy! (one of my favorite blogs!) to be part to be part of their Oh Joy Eats Lunch With series. So awesome and more than happy to do it!

Nice! I’ve had toast with mashed avocado, olive oil, salt and pepper, but never thought to combine with apples, radishes, and cucumbers. Thanks for the lovely recipe and congrats on the OhJoy! feature :)

This does look absolutely divine. I might however choose a french loaf for the bread.
I will certainly have to try this. Avocado and Toast is one of my favorites, but I have never added apple. Seems like a really nice combination. I have all the makings in the house… so maybe tomorrow!?

This dish exceeded my expectations. Coming from a Mexican family, the apple + avocado combo seemed very strange, but it was so delicious! It’s salty, sweet, subtly cheesy and crunchy all in one bite. Love.

This was fantastic! Light, refreshing, suble flavors without being overpowering or too-filling. I don’t eat cheese, so for some extra added flavor I added about a 1/2 Tsp to 1/2 and Avocado with salt & pepper and mashed it together with a fork before spreading on the bread. This was fantastic and will be a staple lunch for me from this day on:)
